Trying to catch up,I got a little behind with school starting back last week,I'll post about that later.As for now,I've got a few new recipes to talk about.One side dish I tried and LOVED was brussel sprouts,I have never been a fan of brussel sprouts at all.I've cooked them a few different ways and never could choke down more than a few.This recipe has changed my mind completly about brussel sprouts!These were delish and I can't wait to make them again and again.I got this recipe from Gwyneth Paltrow's new book My Fathers Daughter,I've read through the book and its great.There are several other recipes I can't wait to try.One thing I loved about this recipe is its very easy and very healthy.Although my kids did not love them,I will continue to make them and serve them and one day they will start eating them,I never give up on them changing their minds about a fruit or vegetable they say they don't like,if we continue to eat them,they will eventually decide to try them more and will like them themselves.Here is the recipe....
1 pound Brussel Sprouts,trimmed
2 tablespoons extra virgin olive oil
A few generous pinches of course salt
Your best,highest quality olive oil for serving
1/2 lemon for serving
Steam the brussel sprouts for 7 minutes,or until just tender.Let them cool a bit and then cut them in half lengthwise.
Heat the olive oil in a large skillet over medium-high heat.Place the brussel Sprouts in a single layer cut side down(in batches if neccasary)Leave them for 4-5 minutes,alowing them to brown thoroughly and evenly-don't give into the temptation to stir them though-the key is to have the flame high enough to brown them but low enough not to burn them,When they've browned,flip each one and let the other side get color,an additional 3 minutes or so.Remove to a serving platter,sprinkle with salt,drizzle with your best olive oil,and squeeze the lemon over the brussel sprouts,trying to get a bit of juice on each one.
I think the lemon juice is crucial to this recipe,it just gives it that little kick and they are fabulous!
