salmon croquettes

These were my Grandpa's recipe,I never had the chance to eat them when he made them,but my dad told me the recipe and I couldn't wait to try them out.I have wanted to make a family recipe book for years and this is just the reason why,there are so many great family recipes that we all have that remind us of our childhood,I know I have some and my parents have some,I just wish I would have done this a long time ago when they were still living.My dads dad,my 'GrandCharlie" died when I was only 11 years old.So I don't remember a whole lot but my dad tells me some of the recipe's he loved that his dad made:)This is one of them, and they were great!!!



1 can salmon
1/2 onion(I used yellow)
flour
1 egg
cornmeal

Heat oil in skillet.
Pick the small bones out of the canned salmon,reserve the juice.Add the egg,onion,and flour.I would say you use about 1 to 1 1/2 cups flour.Make sure its enough to form into a patty without it falling apart.Before frying in the oil dip coat patty in cornmeal and fry until golden brown.
These are so good!
