For our first "new" dish,we decided to try this recipe my husband found online,we had plenty of red snapper so it was time to start cooking it up:)It really turned out great,you never really know with something like this,I've tried several new recipes only to be disappointed,but this was great and we'll definatly try it again,the kids even loved it.So thats always a good sign!Along with the fish,I cooked garlic mashed potatoes with a few blue cheese crumbles on top and fresh steamed asparagus.Here is the recipe for the fish.
Ingredients
2 onions, sliced
4 cloves garlic, minced
1 tablespoon tomato paste
2 tablespoons olive oil
1 teaspoon hot pepper sauce
1 teaspoon Worcestershire sauce
1/2 teaspoon fresh chopped thyme
1/2 teaspoon chili powder
1 teaspoon sugar
Salt and pepper
1 whole cleaned red snapper
Directions
Combine the onions and garlic. Whisk together the remaining ingredients and pour 1/2 marinade over fish with onions and garlic. Let fish marinate in the refrigerator for at least 4 hours. Grill fish on both sides for about 7 minutes. Warm remaining marinade and serve over cooked fish.
For the garlic Mashed potatoes
6 medium sized potatoes,you can use red or white,I used white for this recipe
1/4 cup butter
2 garlic cloves finely minced
salt and pepper
milk
boil cut up potatoes with skin on(or you can peel) until tender,drain water and return potatoes to a large bowl.Add minced garlic,butter and milk,with the milk you should add depending on how thick or thin you like your potatoes,around half a cup or so.Add salt and pepper and start smashing.I use what I call a potatoe smasher,not sure the technical term,but it works for me.you can add more or less of any of these ingedients to suit your taste.
Steamed Asparagus
This is the easiest recipe ever,because there really is no recipe,I love asparagus its one of my favorite vegetables and my family loves it too.But I only like it steamed and nothing else added to it except maybe a little salt and pepper after steaming.Soooo,I just trim the ends and steam for 5 minutes or so until tender,but be careful not to over steam it because it will change the taste.There is nothing better than fresh asparagus!
