Years ago when Ricky and I first got married I started experimenting with new foods, trying to be on the healthier side, I picked brussels sprouts. I had NO idea what I was doing, I had never tried them or knew anyone that cooked them.
So, I steamed them,salt and pepper and oh my goodness, they were disgusting. Like, so bad I couldn't even eat one bite. So fast forward 10 or so years and I'm reading Gweneth Paltrows cookbook, My Fathers Daughter. I see the brussels sprout recipe and I really really want to like them, not sure why? I remember the disaster I created years ago. They looked so good I had to give it one more try. They were awesome. I was hooked! Since then I've altered the recipe some. So, if you love brussels sprouts, hate them, or have never tried them. You have to try this recipe. If you have any good brussels sprout recipes i would love to hear them!
You will need....
15 or so Brussels sprouts
Olive oil
Lemon
Salt
Pepper
Cranberries or craisins ( I used craisins)
Toasted pecans
Blue cheese crumbles
Steam Brussels sprouts for 5 minutes.
Remove from heat and let cool a few minutes.
Cut off ends and cut in half long ways.
Heat olive oil in a skillet and put brussel sprouts flat side down. Cook 5 minutes or until very brown, they will look almost burned but that's good! Flip and cook on other side the same time.
Pull them from the heat and throw them in a bowl, drizzle with olive oil, a nice big squeeze of lemon, I use a quarter to a half lemon. Salt, pep, a handful of craisins, handful of toasted pecans, and sprinkle with blue cheese, if you don't like blue cheese, feta would be really good too!
